Our Chenin Blanc undergoes fermentation in a concrete egg, allowing for enhanced purity and minerality, before being racked to neutral 600-liter puncheons for a brief yet transformative 10-month élevage. The result is a profound white wine—vibrant, textural, and deeply expressive of its terroir. It’s a wine that both honors its Loire Valley inspiration and forges its own identity in California.  I firmly believe this remarkable grape deserves greater prominence in Sonoma Valley.
